Easy Italian Dinner: Fettucine Alfredo with Chicken Sausage. Swiss Chard with Garlic.

Here is a beautiful Italian dinner in under 30 minutes preparation to table. 

Fettucine Alfredo with Chicken Sausage (for 2)
1/2 jar Alfredo sauce
1/4 pkg fettucine noodles
2 large or 3 small chicken sausages (pre-cooked or raw)

Heat 3 to 4 quarts of water, with 3 teaspoons of salt, on high heat.  Boil fettucine noodles according to package instructions.
Chop sausages into 1/2" thick slices. If raw, cook over medium-high heat in olive oil until brown on all sides, and heated thoroughly throughout. If using pre-cooked sausages, cook on medium heat in small amount of oil until heated thoroughly. 
Approximately three minutes before removing the noodles, remove any excess oil from pan with sausages. Add Alfredo sauce to pan with sausages and mix. Stir constantly so sauce does not burn, and lower the heat. 
Drain noodles, and add to pan with sauce and sausages. Sauce should barely coat the noodles. 

Swiss Chard with Garlic:
1/2 package, pre-chopped Swiss Chard or 4 large Swiss Chard stalks with leaves.
If using unchopped chard, dice into 1" pieces.
Place chard in sauce pan with 1/2" water. Cook chard over medium high heat until wilted and water has nearly evaporated.
Add 3 tablespoons of olive oil and 1 clove of garlic. (Garlic Expressions salad dressing makes a nice substitute for slicing garlic).
Heat over medium-high heat for 1 minute, and remove.

Easy Italian Dinner Part II: Fettucine with Tuna and Greens.

Another delicious easy Italian recipe. Light and healthy, too.

Ingredients:
1/4 package dried fettucine 
1/2 packed fresh cut chard or baby spinach.
1 clove garlic
1 tablespoon capers
1 tablespoon dried tomatoes in oil
10 green olives chopped
1 can solid white tuna in oil; 1/2 lemon squeezed; parmesan cheese. 

Bring two quarts of salted water to full boil. Add fettucine and cook to package directions.
Heat two tablespoons of olive oil over medium high heat. Add greens and sautee until partially wilted. Add sliced garlic and sautee for one additional minute. Add capers, tomatoes, and olives and sautee for additional minute. Add tuna with oil. Separate tuna and mix thoroughly. Cook on medium high heat for two to three minutes. Drain noodles and add to pan. Mix and heat for one minute. Add lemon juice and serve. Top with parmesan.
